However, people from various regions in the world are trying to develop their knowledge about coffee, from upstream to downstream, innovation, research and experiments continue to be carried out in order to create the best coffee. At Maillard Coffee Roastery are also joining in the journey of finding the perfect coffee, our way.
How we do it : Starting from selecting coffee beans from providers or farmers, then studying the character and quality of the coffee based on information such as the origin of the coffee, the coffee process and the physical conditions when we received it such as water content, aroma, etc., with this base knowledge we tried several roasting variations; and as result of course we try to recognizing qualities such as taste, flavor, wet aroma and dry aroma, and others. Armed with this information, we can carry out brewing experiments, make various drinks and brewing equipment.
Perfect Coffee : I don't think there will be a definite answer to this. The perfect coffee will depend on each individual, because coffee is very personal.
So the words emerged, "the best coffee is the coffee that is available now" (the coffee that is available is the best coffee). This is the best illustration of how coffee is very personal; There are many variations of coffee beans, roasting methods, blends and there are even many ways to brew them and mix them into drinks, so of the many possibilities, the most delicious is the one that is in front of us right now. But when we talk about perfect, is it the same as the best?
here are some things we think are important for getting the perfect coffee.
Firstly it must be in the plantation, what I don't mean is the variety, origin of the coffee, and altitude, because it all depends on personal taste; for example, there are people who like arabica and there are those who like the strong bitterness of robusta, or you can mix it, it's all a matter of taste, the important thing is that it is planted well, cared well, so that the cherries is good. So what is meant here is picking the fruit, "picking-red" (picking only red / ripe cherries) with strict bean selection, will improve the quality of the coffee we brew.
After we select the coffee beans that are picked using strict selection, the next step is processing the coffee beans, but make no mistake, what is important is not the processing method because the method is related to the taste you want to get, and this is personal; The most important thing is temperature and cleanliness, both of which play an important role in determining the results of the process of coffee beans that are truly clean, without any flavor-stains.

As with roasting coffee, the final process of brewing coffee is also the same, the most important thing is the experience and expertise of the person brewing the coffee; In the hands of skilled brewer, simple brewing methods can also produce delicious coffee, but there is one thing that needs to be emphasized, its the quality of the coffee grinder, which is very, very important.
